Vanessa Favorite: Shrimp & Grits!

2-3 servings
Grits:
-4 cups water
-1 cups old-fashioned grits
-1 tsp. salt
-1 tbs. butter
-1 cup cheese, shredded cheddar preferred

1. Bring water to a boil.
2. Add grits and salt. Stir, cover, and drop temperature to low.
3. Cook for 20 minutes.
4. Before serving, mix in shredded cheese and butter.

Shrimp & gravy:
-2 cups medium shrimp
-6 slices bacon
-1 tbs. butter
-1/4 cup onion, diced
-1/4 cup bell pepper, diced
-2 garlic cloves, minced
-1 cup grape tomatoes, halved
-2 tbs. flour
-1/2 cup white wine
-1/2 cup half & half
-Cayenne
-Salt
-Pepper
-Scallions
-Parsley

1. Dice bacon and fry up in a skillet.
2. Remove bacon and add shrimp (make sure you pat the shrimp dry with a napkin first).
3. When the shrimp is pink, remove from the skillet, add butter and diced onion, pepper and garlic.
Cook until onions are translucent.
4. Add flour and cook for a few minutes until the mixture browns.Then add white wine and half & half. Sauce will thicken.
5. Add chopped scallions and parsley.

Plate up your grits. Top with gravy, shrimp, bacon crumbles and more chopped scallions!
