Shrimp and orzo with white wine-butter sauce

INGREDIENTS:
  • 1/2 lb. small or medium shrimp
  • 1 1/3 cup dry orzo pasta
  • 1/4 cup dry white wine
  • 4 tbsp. butter
  • Juice and zest of 1 lemon
  • 1/2 white onion, diced
  • 3 cloves garlic, minced
  • 5 radishes, sliced thinly
  • 1 cup swiss chard, cut into small ribbons
  • 2 tbsp. fresh parsley, chopped
  • 2 tbsp. green scallion, sliced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper, to taste
INSTRUCTIONS:
  1. Prepare orzo pasta according to box instructions. Drain and set aside.
  2. In a separate pan, melt butter on medium-low heat.
  3. Add diced onions and cook until translucent and soft.
  4. Add garlic, lemon juice and zest, and white wine. Cook for several minutes until sauce begins to thicken.
  5. Add sliced radishes, swiss chard, and shrimp to the pan, and season with salt and pepper. Cook for 3-5 minutes, until shrimp become opaque and curl into "c"-shapes and veggies begin to soften.
  6. Mix cooked orzo with shrimp and sauce, adding crumbled feta and fresh parsley and scallion. 
  7. Serve warm and enjoy!
