INGREDIENTS:
- 1/2 lb. small or medium shrimp
- 1 1/3 cup dry orzo pasta
- 1/4 cup dry white wine
- 4 tbsp. butter
- Juice and zest of 1 lemon
- 1/2 white onion, diced
- 3 cloves garlic, minced
- 5 radishes, sliced thinly
- 1 cup swiss chard, cut into small ribbons
- 2 tbsp. fresh parsley, chopped
- 2 tbsp. green scallion, sliced
- 1/2 cup crumbled feta cheese
- Salt and pepper, to taste
- Prepare orzo pasta according to box instructions. Drain and set aside.
- In a separate pan, melt butter on medium-low heat.
- Add diced onions and cook until translucent and soft.
- Add garlic, lemon juice and zest, and white wine. Cook for several minutes until sauce begins to thicken.
- Add sliced radishes, swiss chard, and shrimp to the pan, and season with salt and pepper. Cook for 3-5 minutes, until shrimp become opaque and curl into "c"-shapes and veggies begin to soften.
- Mix cooked orzo with shrimp and sauce, adding crumbled feta and fresh parsley and scallion.
- Serve warm and enjoy!
